We are proud and excited to announce that local super-chef Elainea Emmott is going to be launching our supper club series here at the Salusbury with her contemporary take on Caribbean cuisine. Emmott’s style incorporates traditional flavours but with a focus on exciting and unique combinations, inspired in part by her Jamaican mother, and including African and Caribbean ingredients.
It will be a five-course sit-down tasting menu in our bar space, with of course a specially-curated wine list to match, chosen by our in-house expert Tom Boronat. Tom has carefully chosen some of our most highly-rated wines to go with each of these delicious courses, and the result is sure to be a flavour sensation.
The menu for this fantastic evening will be:
Okra fries with chilli jam ketchup & plantain bites
Saltfish brandade in small tartlets with pea shoot salad
African Smoked langoustine/prawns with sweet potato mash and bitter salad leaf nasturtium flowers
Oxtail stew with rice and peas
Sweet potato ice cream with Jamaican rum cake – meringue and almond brittle with chocolate sauce/toffee sauce
